Potatoes grow in the dirt.
At harvest time a big machine rolls across the field with rows of rakes at potato-level depth and scoop them up.
And that's what makes Van Gough's Potato Eaters so compelling, he wanted us to know they picked those potatoes, they worked all day for the potatoes they're eating and the workers look like potatoes.
Now I'm sad.

Bake moderate heat, the darker, the better.
I forgot about them. Ran a neighborhood errand. Returned to enchanting irresistibly alluring roasted herb potato aroma. They were perfect. Could have gone a little bit darker.
