This is the Meyer lemon pie made earlier set up enough to cut and mmmm, Boy, is it ever yummy.
And soooo bad for you. It contains:
* 2 cups heavy cream
* 1 cup refined white sugar
* 2 eggs to form a custard
* 1 teaspoon corn starch to assure the custard sets
* 4 juice from Meyer lemons, the liquid acid thickens cream instantly, so a triple whammy on custard formation assurance, egg, corn starch, and lemon juice.
* zest of two Meyer lemons
* generous pinch of salt to counterbalance all that sugar
* 1 teaspoon vanilla
The crust is: flour, butter, lard, sugar, salt.
