Egg, bacon and cheese pie, white beans, grapes


Quiche in any other English and I suppose French speaking nation, in the U.S. that is too gay for men to eat much less make, so says a book worth 1, so there you go, egg pie. 


Ice water keeps the fat solid




Relaxing causes the gluten protein molecules to loosen and the dough will not stretch when rolled out nor shrink when baked, water migrates and evens throughout, the flour begins to autolyze.  






Blind baked partially. Removed and painted with egg to waterproof. Returned to oven to bake on the egg coating. Removed again to fill. So in and out of the oven a few times to control the flat baking and waterproof the inside surface. Otherwise, it's all for naught. 













The ingredients are coated with egg mixture first, then filled to capacity.
