Tuna balls


Hushpuppies with tuna.



Okay, here we have basically cornmeal mush from freshly milled corn. It is not the type of corn used for cornmeal, but who cares? It is delicious. Right here, this mush has salt and pepper and that alone is excellent, but this has chile flakes too. Tasted. Butter added. As cornmeal mush it is wonderful by itself. When I say "tasted" I mean "ate half of it." 

The intention was to include an equal portion of masa harina but I left that out. 

Actually, I could have left out the onion, celery, tuna, panko breadcrumbs, egg, more salt and pepper, all those ingredients did not improve this cornmeal mush. Honestly, it is best as mush. 

And honored as cornmeal mush, say, with chile peppers and cheese, that would be better than what I did here. I do like these tuna fish balls, but not as much as I like this plain cornmeal mush. This up here ↑ is extraordinary while all that down there ↓ is ordinary.









Kids like this tinned tuna, but they do not know any better, and honestly, it is a bit of an anachronism. It's usefulness is durable however, it still makes a very good pantry item.

Do not let its delicious appearance fool you, there is not enough lemon in the world to brighten this abused fish, not enough lime or ginger or lemongrass or sharp spices, not enough happy things in the world to invigorate, reanimate, enliven this zombie substance, it can only be further abused. The freshly milled popcorn is a lot better without it.
