The carcass of this roasted chicken is boiled, pressure cooked to speed it, with herbs but not onions this time.
Culinary liquid gold. You can get chicken broth a lot easier than this, a lot saltier than this inevitably too, even the reduced salt types, but never as good as this. I used all the older bay leaves this time, rid of those, and peppercorn too, but still fairly neutral and without customary mirepoix vegetables so it can still accept all of that.
