Puffed up eggs with cheese


This is stirred down while cooking so that it does not over inflate and spill over as before. I'm learning how much to whip the white for two eggs in this size bowl. I prefer that it is dense anyway. This is turning out to be one of my favorite things. 

Parmigiano coats the bowl
Shredded Asiago mixed through
Cream cheese dotted throughout.

Green onion
