Fried polenta with bacon, serrano pepper and cheese






It's not that great.

The polenta is cooled in a bread pan then sliced and fried. It's better straight from the microwave as sludge. 

I meant to say "porridge" just now but that other word came out.

Grits that are flavored extravagantly with top bacon, lots of it, and top cheese, Parmigiano Reggiano. Then fairly hot serrano chiles. 

It doesn't get better than that. 

While the two extra steps of cooling in a bread pan and frying, the two extra messes do not contribute at all. 

Bah, humbug.
