Boiled in the microwave incrementally to eight minutes.
Odd to make potatoes wet before frying to crispness but that's what I am doing. Drying is not so complete because the exteriors are so soft. Potato starch gets deposited into the strainer and all over this drying paper.
Behold the crispiness. It's ART!
