Mum made these with green bell peppers and I never did care for them never did learn to like them so never made them myself.
I wish I hadn't done that. These are both excellent. The red bell pepper is fleshy and sweet in a way the green ones are not and poblano version is wonderful and deep and rich in a way the green bell is not. I think that could even be started raw. This one was already roasted, the last chile from a previous batch.
