* 1 quart beef stock
* 1 tablespoon butter
* 1 sweet onion
* 2 celery stalks
* 1 jalapeno
* 1 garlic clove
* 1/4 teaspoon cumin
* 1/4 teaspoon coriander powder
* 1/4 teaspoon cayenne
* 1/4 teaspoon tarragon
* 1/2 cup heavy cream to silken the finish
