This is a form of yōshoku, Japanese cooking based on Western recipes and ingredients. It lightens potato salad with vegetables, salted and rinsed onion and cucumber, and diced carrot, and ham. I used applewood bacon and added celery. They kick up the value of sweet/sour with their own type of mayonnaise. That idea is copied with additional rice vinegar and sugar. the onion and cucumber is sprinkled with salt and then rinsed. To knock the edge off the onion and to partially dehydrate the cucumber. It's a form of pickling for both.
