I do not know why they use that word raja with its vulgar connotations when there are so many other innocent words available without that unfortunate baggage. Know what I mean, gelatina frijole?  

There are Spanish words for the English word "strip" depending on what you mean; unclothe, paint, airfield, beds, dismantle, wallpaper, screw threads, flesh, fruit, bark, bands of fabric, all these and more have concept clouds around them in both languages that sometimes overlap, usually by Latin, and sometimes do not. Raja can mean slash, gash, crack and such.

You can see that I'm scrounging around for chiles and finding them. All forms except for fresh ones which is fine but it'd be nice to have vegetable. It's limited to three without getting into the powders, at least five or six different types, some kept frozen. 


The pork was so dry having given up its liquid by being overcooked but that liquid was captured in the sauce that resulted from placing strong flavors in the pot which all became concentrated. Now all of it is added back. 




The pork softens quickly. Faster than you might imagine. Two forks are used to shred the pork. The meat is so tender the backs of the forks are used to smash the pork rather than the tines used to pull it apart, even though it is called pulled pork, it's too tender for that. 

The shredded pork added back to the liquid absorbs the sauce like a mop. The pork chili stew is incredibly flavorful and does not resemble at all the original overcooked roast in texture and flavor.

The very wet liquid sauce is thickened slightly with two tablespoons masa harina, and there is a lot of it. The pork expanded by shredding. 


This is not the same photo as the one at top, no, they're different. If you overlapped them, they wouldn't match at all.
