I'm out of white flour so whole wheat flour milled here at home was used for béchamel. The cheddar cheese is imported through Trader Joe's. It's about one fourth the cost of the cheddar I buy with its fascinating qualities, from Tony's a few blocks away, and I'd say about half of its awesomeness, but still very good when compared with average American impressively industrialized and mass marketed efforts.
