Cucumber is heavily salted to cause the slices to weep their liquid. And that turns out to be a lot. Then rinsed.
Same thing with onion to remove its sting.
Japanese add these things and carrots and ham.
Their mayonnaise is more sweet/sour than ours so additional rice vinegar is added to the hot potatoes along with some sugar.
Half the potatoes are smashed against the side of the bowl.
They prefer to use Yukon potatoes.
