Green salad with shaved cucumber, apple, tomato, croutons, homemade dressing



I'm calling it green because 'green ranging from dark forest green to chartreuse, and brown and tan and red' seemed too long. 

Cucumber ribbons are not fun and not worth the trouble. 

Although the same idea could be useful for a vegetable lasagna or some other vegetable noodle. I am thinking of eggplant, courgette and yellow squash. If the strips were sliced into linguini shape when you get to the seeds the whole area will be waste, and that is fine with me because I don't care for all those seeds anyway.
