Huevos rancheros. You usually see huevos rancheros as fried eggs covered with green chili and sprinkled with cheese, possibly lettuce and tomato and onion or possibly pico de gallo. I have not seen rancheros with scrambled egg so it is probably not technically legal, but there you go. It does not make sense for the tortilla to be on the bottom, it gets soaked, better to have it at the side, but this tortilla is dryer than ordinary because it sat in the pan while I mucked about photographing it so it was soaked with the chili to compensate.

The pork chili is from before and it is still very good. The beans were dry then cooked directly under pressure. Two types of cheeses, neither one is Mexican cheese.
The tortilla is flour and water with butter and salt.
The scrambled eggs are whisked with cold butter as a sauce until the egg stiffens then sour cream is whisked in to finish and abruptly halts the cooking action on the eggs. The sour cream and the butter with the fat in the yolks complete the acid and oil elements of standard dressing.
