Scrambled eggs, pork green chili


Huevos rancheros. You usually see huevos rancheros as fried eggs covered with green chili and sprinkled with cheese, possibly lettuce and tomato and onion or possibly pico de gallo. I have not seen rancheros with scrambled egg so it is probably not technically legal, but there you go. It does not make sense for the tortilla to be on the bottom, it gets soaked, better to have it at the side, but this tortilla is dryer than ordinary because it sat in the pan while I mucked about photographing it so it was soaked with the chili to compensate.

The pork chili is from before and it is still very good. The beans were dry then cooked directly under pressure. Two types of cheeses, neither one is Mexican cheese. 

The tortilla is flour and water with butter and salt. 



The scrambled eggs are whisked with cold butter as a sauce until the egg stiffens then sour cream is whisked in to finish and abruptly halts the cooking action on the eggs. The sour cream and the butter with the fat in the yolks complete the acid and oil elements of standard dressing. 





Pork sandwiches, steamed buns




The pork green chile was put together a few days ago from a small pile of leftover pork chops. It is fairly good and decent, nearly indistinguishable from chili that was planned from the start but nothing to brag about. So, leftover chili from leftover pork chops and that was a few days ago so it is getting a bit distant from its origin.

I'm starting to put carrots in things because I am finally overcoming my objection to their overuse. You see them all around where they do not belong because the cook decided orange dots or orange threads were necessary when they were not, and that lack of imagination carries through from dish to dish to dish.

The tins of chiles use carrot discs for packing material. It's the weirdest thing seeing them in there topping off the tin.   

Once on a flight I was served a tray of food that was divided into sections. On a separate plate was a green salad with shredded carrots. The main thing was Salisbury steak or something similar with superfluous orange carrot chunks. One of the little triangles was peas and carrots and the other little triangle was straight up glazed carrots. Dessert was carrot cake. That put me off carrots for a good decade even though I do basically like carrots.

The steamed bun idea is from the Chinese restaurant. I really like that. It is such a cool way to make little sandwiches with fresh bread that isn't so much hassle.    

Pork green chili


I can produce four small tortillas with the adjective-filled casual insouciant ease of pulling open a drawer in the same amount of time that you would take in opening a package of tortillas, removing four, heating them up, re-closing the package and returning the unused tortillas from wherever you got them. I have to specify all those steps you must take in this race of ours that indicate the full completion of steps or you would leave them out for advantage and claim victory. 

Come to think of it maybe I cannot do it as fast. I'm kind of arrogant that way. Sorry, I was bragging too much there.
