lemon jiggly cake

* 2 lemons, zest and juice
* 1/4 cup milk
* 4 oz butter
* 4 oz cream cheese
* 4 oz ricotta cheese
* 1/4 teaspoon salt
* 1 + 1/4 cup sugar
* 1 teaspoon vanilla
* 13 egg whites
* 6 egg yolks

* bake 25 minutes at 325℉
* bake 1.5 hours at 280℉

Mine did not rise very much so it doesn't jiggle :-(

It tastes delicious. It's so lemony it'll make your jaws squeak.

[I used the massive Nikon 14-24mm wide angle lens and had to get 2" away from the cake or else the lens would scoop up the whole kitchen and make the cake tiny. And I didn't want that. Close up it does this wild thing with perspective. It's fun. But it's also very tricky]

* 1 egg
* half an eggshell of water
* 1 Tablespoon great olive oil
* 1/4 teaspoon salt
* 1/8 teaspoon black pepper

Various types of flour and herbs.

* 1 Tablespoon semolina
* 1 Tablespoon whole wheat
* 2 heaping Tablespoons of all purpose flour

And now we lay it down to rest
And pray the lord it pass the test
May angels help it maximize
Its enzymatic autolyze

Nutmeg and chile flakes.


pita breakfast, ham, egg, cheese

Mmmm, bueno.

Sometimes I think up things that should be famous. So why isn't this famous? Huh? Why? 

Let's see, [pita breakfast]. 


Never mind then. 

pita bread, hamburger, tzatziki dressing

* 3/4 cup hot water
* 1 Tablespoon olive oil
* 1 Shallow Tablespoon sugar
* 1 Level Teaspoon active dry yeast
* 3/4 Teaspoon salt
* 1/2 Cup whole wheat flour
* 1 + 1/2 Cup AP flour

* Half the cucumber is for tzatziki
* 1 Garlic clove
* 1 Tablespoon olive oil
* Five generous Tablespoons  sour cream
* 1/2 Teaspoon salt

Processed in a mini blender

They should rise twenty minutes or so after they're rolled.

Precious Babies, I made a video for you to show how the pita bread puffs up. These can be done in the oven but I like to do them one-at-a-time stovetop.
