Grated hard cheese, the best the world offers, no compromise here, and why should you? don't blow it with a cheap craptastic cheese, just go to the store and say give me your best and mention your intention involve them in your project and they'll think to themselves my what a discerning customer and consider the best way of guiding you properly.

Or else buy the stuff in a pile featured on the table for sale. 

Oatmeal, brown sugar, pecans, strawberries, butter and milk




Brown sugar, cinnamon, and a teeny-tiny itty-bitty pinch of  SALT, because oatmeal, any grain for that matter, is nothing, and I mean nothing, without SALT.




The best kind of oatmeal is the full grain that looks like wheat, groats. They take a long time to cook.

To go faster the groats are smashed with a heavy powerful roller, called rolled oats.

To go even faster the smashed rolled oats are cut into bits, called steel-cut oats

To go even faster than that the oatmeal is steamed along with all the other abuse whereupon it forfeits much of its nutritional value but it cooks in a snap, marketed as instant oatmeal.

Well, an obvious crime of passion. Nobody stabs a potato this many times, so thoroughly front and back and all around and half the way through like this, not without passion. It is as if the murderer intended for the potato to become as completely dehydrated as possible while undergoing the killing torture of microwaving.

And it gets worse, much worse. 


The potato is starchy already but you don't know how starchy, nor how wet, nor how much egg it will take up, as little flour as possible is tapped and the pile handled as little as possible to get it to hold its shape. Otherwise it turns to paste, and that is not good. 


Smile for the camera and say, "Is that cheese? Please."  The red is hot chipotle. 


Hot water to temper the egg to room temperature. 









Poblano chile, cauliflower, potato soup jazzed up with onion, fresh tomato and bacon


Cauliflower, potato, poblano chile pepper soup, described earlier a long time ago as it turns out, no wonder I'm tired of seeing it, neither hot nor cheesy it is not particularly bland but neither is it exciting at all. So, jazzed up with a few bits of things around presently. A lot of nutmeg and oregano on long stems like a dried bouquet shaken from the bag with the corner nicked off.


Bacon left a mess in the pan along with excessive oil, a valuable substance useful for flour tortillas and such. So measured out for the onions, and the mess left in the pan to be lifted off and used for additional flavor by the leftover soup poured directly into the hot pan.
