What we have here is not your ordinary meatballs. This has 1+1/3 LB ground beef, 1/4 LB chorizo, [polenta ground cornmeal, panko bread crumbs, oatmeal for texture and moisture retention], three eggs, a small tin of diced tomato with habanero, brown sugar. Worcestershire sauce, compound butter, regular butter, a lot of those two things, diced onion and garlic, dry vermouth.  Plus water in increments.



Half of the spaghetti pile is actually a thick disc of lettuce cut from the center of a full head. Who does that? 

Nobody does, that's who. And it's a great idea too. The sauce is the best salad dressing for the lettuce. 

strawberries and cornflakes


Grocery store strawberries need a little help. These are macerated with sugar and tiny bit of salt otherwise they're somewhat tart. If you can find the little ones that look a wild or maybe farmer's market strawberries, then buy them. Those are better.

butter burger


After all these years I finally have my hamburger act DOWN. 

The two life changing tricks are:

1) compound butter inside the meat patty
2) potato bread for the bun
















Homemade mayonnaise with a lot of mustard powder. Sugar added as well, and a lot of cayenne. I could have added ginger but I didn't. Rice vinegar instead of regular vinegar because that is my favorite.




Honestly, no joking around, this is the best burger that I've ever made. I enjoyed it quite a lot and it challenges the hamburgers I get downstairs at BurgerFi and that's saying something because theirs are very good. Now, finally I can aver with confidence that mine are even better. 

Plus I learned that I don't have to use so many herbs in the butter. I can back off considerably and they'll still be great. And I cannot overemphasize how much a difference the potato buns make. All the difference in the world. 

avocado

I'm tired of buying these things and not getting to them in time so I'm trying something different. This avocado was held until sufficiently soft then cut and packaged to be frozen. We'll see how this works out.
