The macaroni is made with creamy cheese that melts and the noodles are veritably swimming in it, the noodles slide apart even with an egg in them, so a thin layer of Parmesan cheese is sprinkled onto a hot stick-proof pan to form a cheese crust and the macaroni with its wet cheese sauce is spooned on top of that and flattened. Another layer of hard cheese is sprinkled on top of the flattened loose macaroni and when the bottom layer browns and sets then the whole pile is flipped carefully as possible. This one broke apart but those two thin crusty cheese layers of Parmigiano Reggiano on each side do hold the loose noodles somewhat and together they form an odd and delicious jalapeño mac sandwich.
