Braised chicken thighs

Chicken is seasoned and seared brown on both sides. Small amount of water added, lemon zest, covered and roasted for fifteen minutes. It's done. Continued roasting uncovered for additional ten minutes because I want it a bit overdone. Lemon juice added at the plate because its acid is not good for the cast iron pan. I think. 

These chicken thighs make me so very happy. I'm so glad they came into my-eye lie-eyefe.
