Whipped coconut cream fail, coconut cream success

A tale of two coconuts. These are little monsters to open. My favorite part is hitting them with a hammer around the coconut equator until the sound changes indicating a crack developed. Keep hitting and, boink, it opens.

I learned to buy flat-ish coconuts to produce two shallow bowls. They're much easier to pry out the white part.

Chilled and whipped, the fat stayed solid and separated out a little more liquid but did not whip. Maybe if I had kept at it then it might have finally whipped but the liquid tasted like soap.

This tastes so fine it blows my mind, yo Mickie.
