Variation on a common theme. This is Zep's Epiq Sandwiches coleslaw again this time with pork and all of the gravy and fond that came from frying four of these pork chops. So the cabbage is dark. The fond had salt and pepper from the pork chops and the cabbage has salt to help it start wilting so no more salt and pepper was added. Nothing additional was added and this whole bowl is a total flavor-bomb.
The Benriner slicer was used for the cabbage, the jalapeño and the apple. It was sitting there, what the heck. Why not?
The thing goes all over the place when I use my left hand. I must use my injured hand for this. It hurts. Ew, Daddio, does it ever hurt. But it hurts less than it did doing this same thing a few days ago and this is a good thing.
The gravy and fond darkened the whole thing. Nothing was added except lemon juice.
This cabbage is excellent. It is gravied up and lemonated, sweetened and soured, and the cabbage made to taste like something altogether different from brassica oleracia capitata.
No onion, no garlic, none of the tempting array of Asian flavors in waiting, no herbs, no spices. Just good pure clean fun.
