crossroads taco, green chile pork taco, Torchy's takeout.

There's more to their menu than this.

Damn, this is one hell of a devilishly good taco. It's hot! And you just don't see that anymore. Genuinely hot, and I appreciate that. And not pickled jalapeƱos either, roasted jalapeƱos, and it makes all the difference. All the difference in the world. But we're not in the world anymore, Charon is our guide across the river Styx as we descend to chaos and noise and go were Dante went.

It was an experiment. I don't see the advantage of calling it in.  There is no separate line for pick up that I can see today. There was no line the moment I walked into the place, but in that moment a line formed behind me and I'd be stuck behind them waiting had it not worked out the way that it did. Maybe there's a trick to it that I'm not seeing just yet.

The advantage of staying there is free refills and you can also have proper cocktails if you like or wine or beer.  The prices of these tacos are amazing for what you get. I can see the popularity of the place.

pork roast tacos

The pork roast with roasted red pepper  prepared earlier is resurrected in taco form in imitation of tacos at Torchy's.

They offer little tacos of piles ingredients in various combinations including stewed meats, seasonal vegetables, various cheese and different sauces, and I offer what I have on hand that is easy and it turns out the same thing.

Dough for 2 small tacos. See, we don't want this stuff around. So it's made for this lunch.

1/4 Cup flour
the same cup, half that of Water.
generous nob of butter.
1/2 teaspoon baking powder
salt

The baking powder alters the pH and makes the dough a lot more soft.

Tacos

How to make taco seasoning without a package of taco flavoring mix.

Assemble the spices that go into the packages and improve on them. Leave out chile powder, that's a combination of things that is already covered.

* cayenne chile powder
* paprika smoked, hot, whatever
* coriander seed powder
* cumin seed powder
* dehydrated onion -- but you'll use real onions for improvement
* garlic powder -- but you'll use real garlic for improvement

That would be the basic flavor spice elements but you could also consider

* turmeric
* oregano, especially Mexican oregano
* tomato paste, just a tablespoon or so
* tequila or vodka, beer, or nearly any wine, I personally like sake a lot
* Worcestershire for its tamarind and its anchovy
* s/p
* something sweet so all that doesn't get oppressive
* starch to thicken if you want meat suspended in sauce
* beef broth if you want more liquid

Using thin strips of meat is better than ground beef. Using sliced slowly caramelized sliced onions is better than diced onions.
