tuna, salmon sushi


This will get me an F in sushi school but that doesn't matter, I'm telling you it's fantastic. It surprised me because the fish is frozen and it was difficult to cut for its fibers running oddly in all directions. It's not sushi grade, there was a bone in the salmon and the pieces awkward to cut and I thought oh man this is going to be gross. Everything's wrong. But it was actually very soft, mild in flavor and texture and amazingly easy to eat. I could have had double this amount.

The rice is excellent and the soy sauce is aged and mellow. I used American horseradish typically much harsher than wasabi and the bottle says "hot" but this horseradish is actually very nice.
