Ham and cherry sandwich, homemade malted whole wheat bread


The whole wheat portion 1/3 total flour, is milled from grain purchased downstairs from Co-Brew, a beer making outfit that teaches people how to brew beer and sells all the supplies to brew it at home. 

They have some 50 or so bins of wheat and various grains malted and roasted to various extents originating from various countries. This is an American type lightly roasted. The smell of malt is distinct, but it is not raw grain so it doesn't behave the same way as raw whole wheat berries does. It mills to a fine powder. 

The smell of the dough is quite incredible.
