Yukon potato, mushroom, cheese omelet


The potato is cubed and boiling. The drained cubes are smashed with the bottom of a  jar and fried in butter.

The mushrooms are also fried briefly to 1/2 cooked.

The omelet is basically a burrito shell wrapping the ingredients.

Liquid egg shaken in a jar is poured into a gently hot pan with butter. The egg is allowed to set for a few seconds and the pan shaken hard, jolted actually, to dislodge the set egg and open space for liquid egg to pour into it. Set again, shaken again, and layers built up in this manner. It's finished within one minute and removed from the heat. Cheese added on top of uncooked egg to get started melting immediately. The rest of the ingredients added to the central third. The flap ends folded over the top and rolled out of the pan onto a plate.
