This must have been something like the 20th time I've collected airborne sourdough cultures and I've been surprised many times but this was most surprising experiment of all. An emailer challenged that the live organisms being cultivated were already present on the flour and persons and things involved in the experiment so the actual collection is minimized in importance and the result not precisely native. In order to disprove hitch-hiking organisms, I must sterilize the collecting sample first. Plus a control, for comparison, would be a good idea.
