Chicken enchiladas


What do you expect to do with that unappealing tired old leftover chicken thigh? 

Observe.



The bone is saved. All of the thigh bones are saved. Frozen. 

The masa tortillas pressed from dough too wet and formed into balls too small, but it worked, and it fit in the dish, so not so small after all. Children's size and irregular. 


 Tortillas dipped into the sauce. Normally this would be red.


Enchilada, past tense for 'in chili,' en-chile-ated, so give it some chiles.


Two would not fit in the dish.


I thought one container was sour cream but it turned out to be Philadelphia cream cheese, along with American, and one Mexican type, and heavy cream, and Mexican crema, that is the sauce.
