You should make this or something similar sometime, and win the admiration of your peers.
The only hazard I can think of is in becoming peerless.
Meatloaf, meatballs and such made from beef alone is one-dimensional. This pork is already chopped up and frozen. It is partially thawed, divided because only half is needed for it to change the beef, and diced by hand instead of machine because I didn't care to clean one.
The mass is a floppy mess that cannot hold is shape so dry breadcrumbs are added to stabilize, for texture in the final meatball, but just enough to hold its shape. It does not have to be a sphere. But I insist on it. Two types of breadcrumbs added in increments to adjust and time is allowed for them to absorb. The Panko is drier and crunchier than my own frozen crusts.
Did you know that Panko bread is made by running an electrical current directly through bread dough sponge? Well, it is.
