Flourless chile rellenos. Omelet style with masa harina, the alkalized corn flour that behaves as if it contains baking powder so none of that is needed. Just liquid and masa harina, that's it. It is used for tamales. It is used for corn tortillas. I'm using it for chile rellenos.
This is an omelet with a stuffed chile inside, the egg extended with milk and this masa harina in equal portions. I underestimated amounts. 1 egg, 1/4 cup milk, 1/4 cup masa harina, pinch salt covered only one poblano chile not both as I imagined so another bowl of the same mixture to cover the second.
