Jushi is an Okinawa thing meaning rice and anything else that you like. It can be hard type like this or it can be soft style as a soup. I don't think it usually has raw tuna, but mine does. This time.

I steamed the rice with kombu, a touch of rice vinegar and half a teaspoon of sugar. This has both hot chile pepper flakes and horseradish, the base for wasabi, and soy sauce is added at the table.

How is it shaped into a dome? Magic!

A bowl that shape is rinsed with water so the interior is wet and contents lightly pressed in then inverted  onto a plate. Most jushi is  served in a bowl.
