ice cream without a machine


Couverture chocolate buttons. Cocoa powder will work as well.






Flavor elements are mixed with sweetened condensed milk, then folded into whipped cream.

Standard folding technique whereby 1/3 the whipped cream is folded into the heavier flavored condensed milk thereby lightening it, then the lightened condensed milk mixture is folded into the remaining whipped cream.

All this folding back and forth forfeits a great deal of the whipped air so the less folding the better.
