The green chorizo and these vegetables left a mess in the pot. The mess is loosened and lifted off with sweet red vermouth that permeates through every molecule of vegetable matter by way of its alcohol ethers. <-- I just made that up, it sounded good in my head, honestly, I have no idea what it does.
Cooked until soft with my own chicken broth also already shown earlier from the winner winner chicken dinner. Blended to smooth.
Butter, chile flakes, s/p, bay leaf.
The blended mixture turns darker than usual due to the remnant charred bits in the pot and the color put on the vegetables by frying. There is no artificial color or flavorings, nothing commercial like Kitchen Bouquet or Liquid Smoke, just the vegetables, protein, and fat and a few spices.
This is a meal, not a course, so it is loaded and filling.
Were it a mere course then one single avocado slice and one single tomato and one single piece of chorizo would be on the bottom of the bowl covered and concealed with a mere cup of soup that is insufficient to satisfy yet so incredibly flavorful that you simply must have more of it, but cannot have more because tonight different food is on its way and you mustn't crowd that out with more of this so the situation compels you to come back later to this restaurant for more of this soup and to relive this precious moment and with a big bowl of it next time, good for business but bad for you because that is not possible as this soup is a one-night special. And that's why this soup this night is so precious.
Iceberg lettuce goes on everything. Even soup. It adds a wonderful texture and competes with croutons.
Asiago cheese, cilantro topping.
This soup contains an interesting unexpected underworld of hidden raw vegetables and green chorizo, a rich smooth and balanced body of liquified earthily elements, root vegetables, topped with a deep nutty cheese available to melt readily and breathily aromatic herb. The combination of a salad like this inside a soup like this is wrongly, achingly, naïvely successfully satisfying.
