Broccoli, cheese sauce

Broccoli steamed to tender, tomato and mushroom raw.

The cheese sauce begins with a light roux flavored with powdered mustard salt and pepper, turned to bubbling sludge with wine and then into sauce with milk. Two types of grated cheese whisked in off the heat, a béchamel with wine and cheese, like a stringy fondue except on a plate.
