Pretzels with sourdough culture flavoring









These are very nice. They're made from dough of 1 cup of water with regular yeast and 1/4 to 1/2 cup sourdough culture and enough flour to stiffen that liquid plus salt. That is all. An amount that small is suited perfectly for the Cuisinart and not good at all for the Bosc. 

The dough is sprayed with water supersaturated with baking soda, they could have been dipped in the solution or parboiled in it.
