Chocolate chip cookies


Quintessentially American, if you do not care for these cookies, you risk forfeiting your U.S. citizenship. That happened to my niece. One little careless Facebook post and BLAM there was Immigrations asking her all kind of questions. 


A big pile of dough calls for two sticks of butter but I did not want that much so I substituted two ounces of lard. The commercial dough that you can buy uses vegetable oil.


Less sugar than online recipes cite, both white and brown, creamed with butter and lard and with two eggs added to that.






Wet ingredients, dry ingredients, chocolate chips, nuts.


Dry ingredients into wet ingredients.





Three pounds of dough. The commercial package of dough used earlier was one pound and the cost was $3.50, thereabouts. So, $10.50 worth of cookie dough if that means anything. They also sell larger tubes but I did not check the cost of those. 


This detail means nothing, it's just that I liked it.







These homemade chocolate cookies are better than the cookies made with the commercial dough that is available and so convenient. 

Mind, I'm not complaining about that commercial cookie dough, making this was a pain in the butt and left a mess for me to clean, but these are qualitatively better. The commercial cookies dissolve in your mouth like sugar melting, you do get the sense the dough is half sugar at least. Too much like cotton candy. These are more substantial.

This dough uses less sugar than usual cookie recipes call for and this has cinnamon added which is not called for. Additionally, the chocolate is much richer than milk chocolate mini kisses and this chocolate has slightly more cocoa fat, thus discs that flatten out and not peaks like chocolate kisses have by being squirted out. These cookies are altogether more robust.
