I bought a bag of these tortillas and have been making this a lot as go-to easy thing to make. It is very good, very satisfying, and with no meat to it. 

They're usually folded or the tortilla doubled as a sandwich but I do not do that. Each slice is floppy and folded on the fork to eat it. They can have anything, plain cheese as usual thus the root queso, or jazzed up with avocado, onion, olives, whatever you like.
