cheese polenta, egg, red bell pepper


Polenta is made from popcorn kernels processed to powder and microwave with 3X the amount of water, bacon fat, and spices including habanero pepper.

There is nothing like this sourdough bread.

There just isn't.

If this were a restaurant and this bread offered then it would definitely have its followers who order it every time. It is addictive. Like beer. 



English muffin, arugula in sauce, seasoned ham, egg












This would be good right here, fresh English muffin more tender than you can have when bought from a grocery store and refreshed in a toaster, and arugula in cream sauce. It works.


The shredded pork roast has been sitting in weak sweet marinade going on a week. There is one portion remaining. It's been such a good idea, worked out so well I am going to do it again probably immediately with beef or with pork.




This is not a reasonable meal to make for yourself even if using purchased English muffins and prepared ham. It is too many things going on, too many bowls, too many pots, too much mess for one meal that should be fast. This is the sort of thing you do for a lot of people. Then it is worth the trouble. A version with Hollandaise even more so.

See, the whole effort implies you have a staff behind you cleaning your pots and putting thing away for you. It is the sort of thing on a buffet with the elements in chafing dishes and a whole pile of plates. 

But man, is it ever good. I indulge myself.

The dirt must stay warm, summertime warm, all through the night and the seeds given ten days. Sometimes the seeds germinate faster than that, sometimes longer. Some seeds are on the surface the rest mixed to varying depths, all very shallow to 1/4 inch. 

Today is January 3rd so we will not start to become anxious until the 13th. The pot is set by a 100 W incandescent lamp, the entire clay pot is warm. Arbol plants are hardly worth the trouble. The plants are scraggly and not so attractive and the chile is not very hot at all. The flavor is good so they have that going for them. This whole sack of chile pods cost $1.50, I think, and the seeds alone through a catalog will be a few dollars for ten or so seeds.  

These pods have a faint roasted aroma and I am counting on the seeds not being damaged by heat. I think they'd say so on the label if they were roasted because it is some cost and some bother to roast them.

Tortillas made with butter this time instead of lard or yellow margarine, flour, salt, baking soda, water












1/4 cup dried beans, 3/4 cup chicken stock, butter, spices, herbs. Stirred four times while microwaving in pulses for 1.5 minutes or until boiling temperature throughout.
