pasta shells, cheese sauce, singed jalapeño





These shells are 35¢ a package in the aisle for Mexican food. 

And oddly, they're paired with the best cheese available. You rarely see raw milk cheese in the United States so I snapped it up. It's very good. 

Other countries think we're weird for insisting on pasteurized cheese. The process destroys a good deal of the flavor. It's not even considered real cheese. It's just dumb. Does the process save lives? Our government tells us so.

The jalapeño is singed in the pot before the sauce is prepared. The chile is raw, and they're a lot better roasted or singed first. Try it and you'll see.
