Corned beef, Brussels sprouts, beans, potatod


Why corn? 

Corn refers to any grain, any small particle of grain, any small particle, here, grains of salt. Corn is the same thing as corm. 

In the United States corn means maize but this meat curing did not originate in America. 

It's a British thing too. In British studies of Egyptian art a field of grain is called a cornfield even though the painting clearly depicts wheat.  [Egypt painting cutters cornfield]

It looks like their hair fell off. 

It happens. 

That kind of black could be coal powder mixed with egg whites, and a couple hundred years just sitting there in the dry air, it just falls right off. 

It makes me want to paint it back on.


So brined beef then. And let me tell you, I don't know what I would do if they hadn't included a little packet of flavoring seeds. 


I'm actually offended. 

It's absurd to imagine that tiny amount would season anything worthwhile. That amount was sextupled.
