Ravioli with potato and spinach


These started out as pierogis and then I realized I was just following my mum and she never knew what she was doing and with little advantage like internet or vast cookbook collection or Kindle or anything like interest in cooking and such. 

She was just following her mum too and Nana didn't know what she was doing either. They don't make pierogi dough like regular pierogi ladies do. Regular pierogi ladies put sour cream in their dough and they're formed from discs. Mum uses standard egg noodle dough and cuts out squares and folds them into triangles. So pierogis are triangular like Mum's or semicircular like other peoples'.  

These are none of that and yet with a pierogi filling. So an identity crisis over here, but no matter, they are the most delicious pierogi-ravioli I've ever had. Sorry Mum. 


Mashed potatoes.
Diced onion.
Cheese.
Italian parsley for green and then I realized,

Hey!

Dude!

Spinach!

Sometimes thoughts occur in a series of explatives, most embarrassing. 

Spinach wilted by the heat of the potato.
