Con acciughe e menta.
This is one of those things on par with pasta pomodoro (tomato) and pasta putttanesca (whore). The sort of thing you toss together with basic ingredients when you're slumming it. It's slipshod, not a genuine meal. Well, it is a genuine meal, and quite satisfying too, but so easy even a caveman can do it. Simplicity at its most elemental. The technique is the oil is flavored with garlic, anchovy or olives, whatever, and the pasta water is used to emulsify with the oil and parmigiano off the heat to form a creamy sauce.
Here I used butter to mix with the olive oil. Obviously you can doll it up with an egg, any vegetable; zucchini, broccoli, beans, bacon, ham, what have you.
With top olive oil and parmigiano reggiano you're really not slumming, it just feels that way because it's so easy and fast.
