Looks good! I look at your french fries and I crave them. I haven't tried this type of fish before and would love to find it. I can say there's nothing like farm raised catfish fried on the bone. You eat one side...flip it over and eat the other side. The crust is crunchy and deep golden brown (not greasy) while the meat (ok fish) is steamy flaky and tender. You serve this with some hush puppies cooked in much the same way with sides of coleslaw, tartar sauce and McIlhenny red tabasco sauce. Oh, and slices of fresh onion and lemons. This is how its served in the Delta and in central MS. I miss this!
