Apple cobbler


Apple cobbled with ricotta and a very mild Swiss cheese with a German sounding name. 

This is an odd way to go about things but cobblers are odd things anyway, improper pies with insufficient proper pie ingredients and without a proper pie bottom. Cobblers came about by not having all the right ingredients at one time or for a period and the whole deprivation thing caught on. People are like that all over. People grow up with poverty and deprivation and learn very well to make do with ingredients at hand and then that becomes the preferred home cooking even in later periods of abundance.  

A flavorful batter is prepared that contains an egg, oil or butter, flour, sugar, salt, and that's pretty much it. This batter contains those things plus cinnamon, ginger powder, both brown and white sugar and buttermilk. I kept thinning it with more and more buttermilk. I had no idea what that would do. There is no leavening beside the single egg. It wouldn't hurt to add a little baking powder, or in this baking soda to react with the buttermilk but I didn't do that.
