Japanese potato salad

Western dishes adopted by Japan are called yoshoku. This is an example of such. Potatoes peeled and boiled, carrots julienned and blanched, eggs hard boiled, cucumber salted and made to weep its liquid, rinsed and squeezed hard, and the treatment given onion to disarm it of its unpleasant sulfur bite. It's a bit of a pain in the butt.

Japanese mayonnaise, Kewpie, is sweeter than American mayonnaise, but not much sweeter than Miracle Whip. This is homemade mayonnaise so sugar is added along with rice vinegar, mustard, and ginger.

It really is worth the trouble. I like it better than all other potato salads.
