catfish with fruit and carrots




Kiwi, peach and watermelon

Orange and yellow carrots with pecans in butter and brown sugar.

The catfish filet was dusted with flour right there on its butcher paper, dragged through a beaten egg and coated with panko pressed into it that was rubbed with olive oil so that it browns. 

Baked for 10 minutes at 400℉, tested with a thermometer, baked for an additional 12 minutes.

Or something like that. I forget the exact minutes. 

Whatever the case, this was a huge meal and delicious.
