Homemade pasta, heirloom tomato








It's basically aglio y olio with tomato added. I used cilantro because that's what I have. 

I didn't unroll the pasta after they were cut. They were boiled as spirals and they cooked in that form. It all goes to show how you can mess things up even after decades of doing them. It's actually kind of fun, but the pizza cutter would have been better. 

The pasta is abut 30% semolina. 

This is so good. So simple. So satisfying. I don't know why I don't do it more often.
