aglio e olio



This was a favorite regular thing because it's so fast and easy and satisfying. 

It can be done in one pan by cooking the angel hair pasta in shallow water, draining it into a strainer  over a cup to reserve the liquid for sauce. Generous butter and olive oil in the same pan with finely grated garlic and chile flakes. The reserved liquid added back to the oil and the pasta returned to the pan. Grated cheese to finish. 

It can be dolled up with anything.
